Chocolate Donuts with a Chocolate-Peppermint Glaze
It’s Monday…ugh. The weekend went by way too fast! On Saturday, we watched the 50th Anniversary
special of Dr. Who. That show is
amazing!! I was totally blown away at
how good it was. I need to watch it
again, and soon! I think it was the
highlight of my weekend. Mind. Was. Blown.
I digress. I should be talking about these donuts. They are something seriously delicious. I’m not into deep frying things, so baking these are
perfect. And they turned out so moist,
chocolate-ly & even better with a chocolate-peppermint drizzle!! So start your Monday off right and make a
bath of these!
Chocolate Donuts with Chocolate
Peppermint Glaze
Makes 12 donuts
INGREDIENTS
For the donuts:
1 1/4 C. all purpose flour
1/2 C. sugar
1/3 C. dark cocoa powder
3/4 t. baking soda
1/8 t. salt
2 eggs
1/2 C. milk
1/3 C. fat free sour cream
1 t. vanilla extract
3 T. canola oil (or melted coconut oil)

For
the glaze:
1 tablespoon melted butter
1/2 cup powdered sugar
1/4 cup cocoa
2 tablespoons milk
¼ teaspoon pure peppermint extract
Powdered sugar, for dusting (or crushed peppermint
candies)
Red & green sprinkles
DIRECTIONS
For the donuts:
Preheat
the oven to 375 degrees. Prepare the donut pan by lightly spraying it with baking
spray.
In
a medium sized bowl, whisk together the flour, sugar, cocoa powder, baking soda
& salt. Set aside.
Beat
the eggs then add the milk, sour cream, vanilla & canola oil. Beat until
combined, then add to the dry ingredients, mixing until well combined.
Place
the batter in a zipper bag, cut just about 1/8 of a corner of the bag. Pie the
batter in a donut pan, filling each to 2/3 full.
Bake
the donuts for 7-8 minutes.
Remove
from the oven and cool for about 3 minutes, then cool completely on a wire
rack.
For the glaze:
Combine
the butter, powdered sugar, cocoa, milk & peppermint extract. Dip the donuts into the glaze and place on a
wire rack. Sprinkle with powdered sugar & sprinkles, if using.

DeleteI don't have a donut pan... do you think I could hand form these or possibly make them into donut muffins?
ReplyDeleteHi Katie! I don't think that it would work out too well to hand form these as the batter is quite soft & more cake-like. You could try donut muffins-let me know how they turn out! Good luck!

DeleteGreat. I like mint so added creme de menthe flavor to the batter and topped with chopped mint chocolate chips. Very good.
