Baked Cheesy Refried Bean Taquitos
As
you all know by now, I love Mexican
food. Everything about it makes my mouth
water and my stomach grumble. I love
the spice combinations and bold flavors.
It doesn’t get any better than thatJ
These darlings are packed with refried beans, spices and cream cheese
& baked in the oven. Serve with a
salad or some Mexican rice and you’ve got yourself a fine meal!
The
pictures are similar to my previous chicken taquitos-they are SO tricky to shoot! But they taste just as good, if not better. Gavin and I enjoyed this vegetarian option for taquitos-always good to have it on the repertoire!
Baked
Cheesy Refried Bean Taquitos
Makes
about 8- 10 taquitos
INGREDIENTS
4 ounces cream cheese, softened
1 398 ml (14oz) can refried beans
½
cup black beans, mashed
1
teaspoon chili powder
1 teaspoon garlic powder
1/2
teaspoon cumin
½ onion, minced finely
1 cup cheddar cheese, shredded
8-10
(6” flour tortillas) Flour tortillas
Salsa,
to serve
Sour
cream, to serve
Guacamole,
to serve
DIRECTIONS
Preheat
the oven to 425 degrees. Line a rimmed baking sheet with parchment paper and
set aside.
In
a large bowl, combine the cream cheese, refried & black beans, chili
powder, garlic powder, cumin & onion together until well combined.
Spread
about 2-3 tablespoons of the refried bean mixture on the center of each
tortilla. Top with cheddar cheese and roll each taquito up tightly. Place seam
side down on the prepared baking sheet.
Lightly
coat taquitos with cooking spray & bake for 15 minutes. Serve & enjoy!
