Cranberry Relish Turkey Sandwiches
I didn’t
really care for sandwiches until I met Gavin.
I used to think they were boring and only make myself peanut butter and
jelly sandwiches (once in a while I would change things up and make a cheese
and onion sandwich *haha*). Gavin just
loves them, and usually goes ‘all out’ when making them. The bigger the better!
I really wanted
to focus on the flavor rather than the size of the sandwich. I love the turkey and cranberry combination. The American Thanksgiving this past Thursday made
me crave it soo bad! Rather than making
a huge turkey dinner, I bought a turkey breast and made us these sandwiches. I was pleased with the results! Gavin really enjoyed them too-he didn’t put
anything extra on these sandwiches, so that’s a huge compliment! I am already looking forward to Christmas
dinner leftovers to make these sandwiches again….can’t wait!
Cranberry Relish Turkey
Sandwiches
Serves 2
INGREDIENTS
For the cranberry relish:
½ medium
seedless orange
½ medium
lemon
½ medium
apple
¼ cup sugar
2 cups
cranberries, fresh or frozen
For the sandwich:
mayonnaise,
desired amount
3
tablespoons goat cheese
2 lettuce
leaves
.5 pound
of cooked turkey
½
avocado, sliced
4
tablespoons cranberry relish
Brown
Bread
½
tablespoon butter, at room temp
DIRECTIONS
For the cranberry relish:
Finely
shred the orange and lemon, set aside. Remove the peels and discard, and cut
the orange and lemon into wedges, ensuring all the seeds have been removed. Core
apple, cut into chunks. Place the orange, lemon and apple in the food
processor, add sugar and pulse until coarsely chopped. Add in the cranberries
and process until chopped to desired consistency. Transfer to a medium sized
bowl and stir in shredded lemon and orange peel.
Sit at
room temperature for 30 minutes prior to serving.
Store in
refrigerator for up to 5 days. Makes approximately 1 ½ cup relish.
For the sandwich:
Butter
the bread on each side and place on saucepan over medium heat until browned
evenly on both sides. Repeat with remaining slices.
Place
desired amount of mayonnaise on the bread. On one piece, place half the goat
cheese and top with lettuce. Place the turkey on top of the lettuce and top
with avocado. On the other piece of bread, spread the cranberry relish evenly
and place over top of the avocado. Repeat to make the 2nd sandwich.
Serve.
