BLT’s are such a classic-it’s no wonder they are on my top 5 sandwich list.   Of course, it’s even better deconstructed into salad form.  Genius!  I’ve been thinking & planning on making this salad for quite some time now, so I thought I’d better get on it.  It’s super easy & comes together quickly.  The dressing is slightly garlicky, so don’t use so much if you don’t like it-we both thought it was perfect but then again, we are garlic lovers!

Vunderbars

Have you ever made something so tasty that you feel like you have to immediately apologize and say you’re welcome in the same sentence?  I did today.  It doesn’t happen very often, but then again, these bars don’t happen very often!

I can’t seem to contain my excitement for these-they are fantastic.   I really don’t think that there’s anything that I disliked about these bars-they are the perfect combination of peanuts & chocolate with a crunchy texture from the Rice Krispies and rolled oats.  Seriously-I know these take a little bit of work but they are totally worth it.   I had one last week at a local cafĂ©, and well, I was sold.  They’ve been on my mind ever since and I was really excited to make them!

Cheesy Quinoa & Cauliflower Bake

My first experience with quinoa that I can remember is Marlina making this recipe.  It was a hit in our house and gone fast-too fast!  This was before quinoa became so popular.  I think what I most liked about it stands true to this day-it’s healthy & you can feel good about eating it.  Quinoa is definitely one of my favorite grains to work with-I love using it in salads or as a main dish. I love the vegetables added to this dish-I don’t eat a lot of cauliflower & leeks and the combination works out perfectly.  Plus the cheesy cheddar & dill flavor-you can’t beat thatJ Yum!  I’ll be sure to make this before I work-great leftovers & lunch!

Triple Berry Crisp

This past weekend marked the first day of summer.  Of course, it was quite rainy and not so summery outside-so I needed to make something to brighten up our day. After much deliberation (I think I spent more time planning that actually making the dessert!), I made a triple berry crumble that I had made a couple weekends ago.  It was a hit with my family and Marlina finished off the rest for breakfast the next day.  Totally justifiable, right?

I’ve been absent from the blog lately, but not without reason.  Sorry guys!  Things have been really busy in general, and it’s been hard to sit down and write.  I do have some exciting news that included a trip down to Vancouver with some of my family, so I will post about that next timeJ  I am still waiting for more pics, but can’t wait to share with you about it.

When I was younger, we went to the farmers market every weekend-no excuses.  We used to sell coffee & tea.  We loved going every week, and part of the reason was that we got to purchase spanakopita’s from a local bakery.  We would buy and eat plenty of them-they were up on our favorite snacks!

Summer Berry Salad with Poppy Seed Dressing

 
Finding inspiration to eat healthy can be difficult if you don’t have the right salad..trust me, I know.   Even though I love each one I post on here, I need some variation.  I’ve had this recipe for quite some time now and we enjoy it every time I make it-it’s simple and comes together quickly!  The poppy seed dressing really makes this salad special, and gives it a refreshing and unique flavor.
