I feel a bit nervous about posting.

It’s been so long since I’ve shared anything, and I’m feeling a mixture of guilt and sadness since I haven’t been able to dedicate any time to blogging. I feel that I was so obsessed with blogging for so long that I needed to take a break and focus on other aspects of my life.  It’s incredible to think of the time spent around blogging-and I want to be able to do it when I know I can enjoy cooking/photographing/editing/writing the post.  So let’s get down to it, k?

Baked Mushroom & Lentil Burger 

After a long 6 weeks without a computer…..I’m back:D!!  Gavin had attempted to fix my laptop (very unsuccessfully I might add) and so it’s been in the shop since then.   It’s a bit of a sore subject with him, so I won’t get into the details.  Nevertheless, it’s been such a long haul but I’m very happy to be back.  Nothing much new life-wise for me over here-I feel kind of boring, but that’s how life goes!

Coconut Chicken & Vegetable Curry

It’s been just under a month since I last posted, but I’ve come back with something that I hope you will love as much as I do!

It’s been feeling SO much like spring lately, the roads are almost cleared, the sun is shining and the Nordic trails are still in good condition (I went for a ski the other day and the conditions were perfect!).  Life is SO good lately!  Gavin and I are beginning to run again, and it’s been so nice to get my feet on the pavement and go!  I’m not fast by any means, but it’s good to get out.   Gavin bought me a Fitbit Surge for Christmas-I’m loving it’s GPS qualities. I don’t have to carry my phone anymore while running! :D Do you have a Fitbit? PM me and we can be friends!

The Everything Oatmeal Cookie

It’s been over a month since I’ve posted, and I can’t say I feel that bad-I’m sorry!  It’s been really busy around here lately, which is my usual excuse, but it’s true.  My sisters were up for Christmas and it was so lovely having them here and spending time with them.  I also had to work Christmas for the first time in years so I had mixed feelings about that, but the day went by okay. You make the best with what you have!

I’ve been trying to do new things while having fun and getting outdoors this winter, because I typically tend to hunker down and stay indoors until spring comes.  But I’ve managed to reignite my passion for cross-country skiing so that’s been so rewarding!  Long and late night skies have been my highlights!  Unfortunately, spring has decided to come early and it’s making it harder to ski, so I’m slightly saddened that the season will be done soon enough.

Creamy Eggnog Rice Pudding

After Gavin’s birthday (which is at the end of November-he turned 29!), we generally start getting things ready for Christmas.  This year, it seems like things have been going by way too quickly-I don’t have a tree yet, and I’ve only baked a small amount for the blog!  I’m slightly saddened by this, but there’s still time! J  I have so many ideas and so little time. But we will see!  Sometimes I work better under pressure;)
