The Everything Oatmeal Cookie

It’s been over a month since I’ve posted, and I can’t say I feel that bad-I’m sorry!  It’s been really busy around here lately, which is my usual excuse, but it’s true.  My sisters were up for Christmas and it was so lovely having them here and spending time with them.  I also had to work Christmas for the first time in years so I had mixed feelings about that, but the day went by okay. You make the best with what you have!

I’ve been trying to do new things while having fun and getting outdoors this winter, because I typically tend to hunker down and stay indoors until spring comes.  But I’ve managed to reignite my passion for cross-country skiing so that’s been so rewarding!  Long and late night skies have been my highlights!  Unfortunately, spring has decided to come early and it’s making it harder to ski, so I’m slightly saddened that the season will be done soon enough.

Homemade Fig Newton's

I have strong memories when I think of Fig Newton’s.  Yeah, I’m strange.

I miss my childhood sometimes.

When I was a kid, we would go to my Grandma & Grandpa’s house after school.  They actually weren’t my grandparents but they were my mom’s best friends.  We LOVED visiting them-they always had plenty of food to go around…chow mein, egg rolls & rice {to make our cheeks big and pretty!}.  I remember staring at the Barbie collection for hours, watching TV, playing Nintendo and visiting.  We would also eat lots of Fig Newton’s, or a brand quite similar.  It was always so hard going home!  Nevertheless, when I saw this recipe, I immediately thought of them.  It’s kind of interesting how certain things can trigger memories and make you yearn for simpler times.  Grandma passed away quite some time ago, but I still think of her often.  She was always so kind and caring-a wonderful human being.

Red Velvet Oreos

On Tuesday I brought you Red Velvet Cupcakes.  Today I’m bringing you Valentine’s Day Red Velvet Oreos!  Again, I love red themed desserts-so romantic!  I only break them out at this time of year because well, it so appropriate.  I’m so excited for Valentine’s Day. Gavin and I will be staying at home, but I will be cooking (I am excited for this!:))

Soft-Frosted Lofthouse Style Cookies

Last week, I participated in my FIRST cookie exchange.  At first I was so flippin’ excited, I could barely contain myself!!!  But then I started feeling slightly intimidated on baking 6 dozen cookies, so I decided to split it up a little & make rum balls & sugar cookies.  Then I started feeling insecure about the recipes I had chosen.  Oh man…..what a mess!  I really wanted everyone to like them and I think it worked out okayJ  All in all, it was a good experience & I know what to expect for next time.

Happy Monday everyone! Today I’m excited to welcome back Courtney from The Fig Tree Blog.  Last year, she posted this amazing Peaches & Cream Ice Cream.  I cannot even think about it right now without drooling!! She is a talented photographer, baker, blogger, but most of all she’s an extraordinary human being.  I am so lucky to have her as my friend!!

Hello! My name is Courtney and I'm the blogger behind The Fig Tree - a wholesome food blog that celebrates vegetarian cuisine from around-the-world. I started The Fig Tree to inspire others to use a diverse range of ingredients to create simple, healthy meat-free meals. That being said, I do have quite a sweet tooth and love to bake. Cookies are my weakness!

 Samoas Cookies

Have you ever seen a cookie recipe that you fall in love with before even trying?  That’s what happened with these cookies.  I had no idea they were actually an inspired version/re-creation of the famous Girl Guide cookies (although they look slightly different than photos I looked at but I imagine they taste the same).   They have a lot of my favorite ingredients-a buttery shortbread base with a chewy caramel coconut topping and a chocolate drizzle.  They are simply delightful, especially with a big glass of milk!

Chocolate-Toffee Chip Oatmeal Cookies

We are back in business!  I didn’t think I would need this much time to resettle post vacation, but, unfortunately I did.  It’s been an interesting adjustment to say the least to return to a ‘normal’ life after a month of traveling and relaxing.  I think I have almost adjusted…. which I find slightly depressing at the same time.  I spent so long just trying to relax.  Ugh!  However, on the brighter side of things-I am excited to share our trip with you.  We loved Costa Rica so much that we are already planning on going back next year!

Chocolate Chip Cookies with Nutella, Sea Salt & Browned Butter

Cookies.  I’m soooo obsessed with them.  I have a few good recipes posted on here but I can never get enough.  The thick and chewy chocolate chip cookies that I posted last year are simply the BEST.  I kind of felt that I would be cheating on my favorite recipe, so I’ve always resisted the urge to try another one.  Sounds very strange, I know.  I don’t like messing with perfection.   But I got over it quickly once I saw this recipe: I have fond memories of nutella-my sisters and I used to eat it by the spoonful when we were young.  Fun times indeed!

Linzer Cookies

On a recent trip to PG, I finally gave in and bought these adorable cookie cutters.  I’ve been resisting the urge for so long!  However, I was so pleased that I did.  I love these sandwich-like cookies for their cute and elegant appearance.  What’s even better is that they taste great!  They do require some time and patience but all in all, I would say they are worth it.

Chocolate Crinkles

This is the last of the holiday treats, I swearJ.  Well; I suppose with Christmas fast approaching, it’ll have to be the last one (unless I post some after!).  I am so happy that Marlina is here and that I get to spend some much-needed time with her.  So much planned, so little time!

Sugar Cookies

Hope everyone’s had a pleasant weekend-it’s been a busy one for me!  We got back from Vancouver Saturday morning (I had to wake up at 5:30, ugh!) and ran errands Saturday & Sunday.  Planning Christmas Dinner with Marlina….super excited!  I’ve also been playing around with my new laptop Gavin surprised me with (he couldn’t wait for Christmas!) I absolutely love it…my previous one was over 8 years old (and still running!).  I’ve put it in hibernation for the time being to give it a breakJ

Hazelnut and Browned Butter Shortbread

Shortbread reminds me of Christmas season.  I am being reasonable, right?  I mean, it’s almost a month away....almost.  I figured I should start busting out some Christmas recipes before it sneaks up on me!  And, with the addition of snow, it feels just right.  I can’t wait to start going cross-country skiing (my absolute favourite winter activity).  Hopefully today!

Witches’ Fingers

Halloween is coming!  I am so excited; I think this is one of my favourite times of year.  Not because of the enormous amounts of candy or chocolate, but because I love decorating my house and seeing what everyone dresses up as.  I love having kids knocking on the door and giving them candy! And carving pumpkins.  Yep, pretty much everything.  I’ve also become a fan of spooky-themed treats.  I haven’t done anything over the past years like this, so bear with me!  I’m super excited to see what we come up with.  I should have done this ages ago!

The Double Chocolate Cookie with Almond Flour

About a month ago, Marlina mentioned that I should check out a recipe for a chocolate chip cookie made with almond flour.  While I was all about trying it, there was something nagging at me to try and make my own.  I hadn't really come up my own cookie recipe before, so I was slightly nervous but figured-what's the worst that could happen?  I've been trying to eat better (more vegetarian-type foods that not), and wanted to reflect 'healthy treats' that with this cookie.  And it turns out that you can make a healthy cookie that tastes delicious!

Thick and Chewy Chocolate Chip Cookies

I love chocolate chip cookies.  They are one of the only pure sources of comfort food for me.  I've gone through so many chocolate chip cookie recipes over the years with the conclusion that I would never find the perfect one.  But I did.  YAY!  I finally discovered this recipe last year and use it all the time...my apologies for not sharing it with you sooner!  I suppose I feel a little too protective over these guys.  They are the soft, ooey-gooey cookie that you see in bakeries or on TV but for the life of you, can never be replicated.  Well, here they are!  You're welcome in advance!

Cranberry Orange Poppy Seed Cookies

Let me be kind and give you the heads up.  These cookies are seriously addicting.  You may want to turn back.  If you are still here, then you're welcome.  It may seem silly to make a big deal out of cookies, but it is rare that I come across a cookie recipe I just love.  You see, I am very picky about them.  I've only come across one other recipe for chocolate chip cookies (I have yet to share with you) that makes me want to 'veg' on the couch and eat the whole batch.  This is why my thighs hate me and I grudgingly had to take up running.  I kid, I kid-I love running.  Most times:).  But these cookies do not help my goal to eat less sweets!

Chocolate Macarons

If you’re looking for an easy recipe for Valentine’s Day, then this is definitely not the recipe for you. I am not going to lie; these little guys take a lot of patience and love. And I mean, lots of love. And patience. Plus it helps if you’re slightly obsessive about macarons. After spending weeks of researching these cute yet incredibly intimidating and finicky cookies, I went with a trusted source: Annie’s Eats. She has a wonderful tutorial that (almost) guarantees the success of your macarons. I say almost because there are a variety of things that potentially could go wrong, so it is important to follow the instructions precisely. What I can say is that you can still eat the ones that didn’t turn out and they will still taste amazing! Regardless of whether or not you succeed-it’s okay. Practice makes perfect.
