Coconut Chicken & Vegetable Curry

It’s been just under a month since I last posted, but I’ve come back with something that I hope you will love as much as I do!

It’s been feeling SO much like spring lately, the roads are almost cleared, the sun is shining and the Nordic trails are still in good condition (I went for a ski the other day and the conditions were perfect!).  Life is SO good lately!  Gavin and I are beginning to run again, and it’s been so nice to get my feet on the pavement and go!  I’m not fast by any means, but it’s good to get out.   Gavin bought me a Fitbit Surge for Christmas-I’m loving it’s GPS qualities. I don’t have to carry my phone anymore while running! :D Do you have a Fitbit? PM me and we can be friends!

General Tso's Chicken

I haven’t posted any Asian-inspired meals lately, and I think it’s about time to do so.  I love cooking with chicken-and anything spicy usually gets my attention.  This is a lightened up version of General Tso’s chicken which means that there’s no deep frying involved.  Perfecto!  The sauce is slightly spicy, gingery and quick to make-less than an hour so it’s easily a weeknight meal. Serve with rice and you’ve got a perfect weeknight staple.

Honey & Sriracha Baked Drumsticks

Happy Tuesday-did everyone (in Canada) enjoy their long weekend?  I got back to town on Friday morning and was excited to be home and rip apart our deck. I didn’t have to do that much-Gavin had taken care of most of it :D. It was a beautiful day-one of the best so far.  I can’t wait to have more this summer.  We will begin to rebuild the deck it next weekend and I’m really looking forward to it-we’ve needed to do it for a long time!

Mom's Lemon & Soy Sauce Chicken

My post about Fig Newton's got me thinking about my childhood.  There are a few foods that trigger memories, and this is one.  I remember my mom would make this chicken for special occasions-mainly for our yearly Filipino gathering and birthday parties.  I remember being dressed up in our best dresses (matching, of course!) and watching these beauties cook for hours on end.  The smell of them cooking was intoxicating-I loved it.  My mom, being Filipino, would make large quantities-enough to feed a crowd.  And there was barely any leftovers afterwards!  So I recreated this and made it for mom's 65th birthday-she loved it!

Chicken Gyros

I can’t even tell you the amount of times I’ve made this meal and have been unable to share with you all-the pictures weren’t quite right.  I’m very particular that way, but I'm sure most of you know that by now:).  I guess it was the same with the chicken taquitos!  I can never give it proper justice.  But since I am semi satisfied with the photos, I suppose I can share with you allJ

Baked Chicken Nuggets

Chicken fingers, among sandwiches, are one of Gavin’s favorite foods.  Chicken nuggets come pretty close, just because they are practically the same thing.  I’m not even joking.   It’s not unusual for him to order them when we dine out.  It’s kind of embarrassing-which is why I like going out for sushi.  Totally justifies itJ.  He’s such a kid at heart-I can’t help but love him!

Chicken Parmesan Soup

I love this weather that we’ve been having.  It’s been unnaturally warm out lately, not our usual frigid temperatures at this time of year.  The coldest it’s been is around -7, which is not so bad!!  Several times last week it got over to plus 4.  It’s running weather!  So, I put on my new pair of ice cleats and went twice-It was so great to be out there again!:)  I hope this weather continues and that I can keep it up:D

Buffalo Chicken Wraps

I have this crazy obsession with buffalo chicken.  I love it-maybe a little too much.   I can eat it for days on end.   It’s okay though, because I’m always excited to make it:D  One of my favorite salads of all time is this buffalo chicken salad I made last year.  I haven’t stopped loving it since!

Creamy Baked Chicken Taquitos

I love taquitos and I’ve been holding these back for a while.  So sorry!  The pictures never did them justice, so I never felt it was appropriate to share.  Now is the time to share them.  Oh I’ve waited to this day for so long!!! *Happy dance*

Sticky Orange Glazed Chicken Thighs

If you are drawing a blank on what to have for dinner, look no further. This meal has got you covered!!  It’s easy-peasy and perfect for a weeknight dinner.  It’s similar to my other orange-glazed chicken (I seem to have a thing for citrusy chicken) on the blog, except this one has a little bit of heat!

Chicken with Tomato-Herb Pan Sauce

There’s something about this meal that makes it unforgettable.  I don’t know what it is-I typically make this in the fall/winter, because that’s when I start to crave it.  The compound butter mixture is ingenious-it surely rounds out the flavor of the tomatoes. And chicken with tomatoes is well, of course natural pairing!  You can serve this with any type of side…I think veggies & rice would be great!

Buffalo Chicken Salad with Creamy Avocado Ranch Dressing

I have an unfortunate story related to this meal.  I don’t know about you, but it drives me nuts when I have a lot of dishes in the sink.  Last week, I was waiting for the oven to rise to 475 degrees and so I started washing the dishes to kill the time.  Unexpectedly, a glass cup broke in my hand, thus resulting in a trip to the emerg department.   I ended up receiving a total of 9 stitches to my right index finger, but was happy to report I was in and out in less than 1 hour.  Unfortunately those stitches are still with me (and will be for a total of 2 weeks!) and it’s still slightly sore....but it definitely could have been worse for sure!

Orange Glazed Chicken with Mint Whipped Feta

I love many things in life, and one of them is going out for lunch with a good friend.    It’s a bonus when it’s at one of my favorite restaurants.   Two Sisters opened their doors officially in Smithers last year and have been such a nice addition to the town.  I love that they use as much locally grown produce & meat and have such a great atmosphere.  The quality of the food there is simply amazing-wholesome, fresh & nutritious.  You add baked goods, fantastic coffee & cappuccino’s to the mixture and I have a difficult time staying away!   I swear I drool every time when they update their Facebook page to keep everyone posted on their food & dessert specials.

Chicken Tikka Masala

I always have a hard time finding recipes that would replicate Indian dishes to ones that you would normally find in restaurant.  I haven’t had as much exposure to Indian dishes due to the fact that there is a very limited quantity in Northern BC but with the exposure that I have had-I love!

Creamy Chicken Marsala Pasta

I love comfort dishes-especially when it is a dreary day outside.  I was so excited at the prospect of snow, I love cross-country skiing and can’t wait to go!  But the weather’s been warm, the snow is almost all melted, and it’s started to rain.  My dreams are slowly fading-well for now, anyway.  I shouldn’t complain-our winters are usually quite long anyway.  I just get so impatient!

Slow Cooker Sweet and Sour Chicken

I have yet another confession to make. I'm completely terrified of my crock pot. I know my feelings are unfounded and slightly crazy, but it's true. It's fairly new (I bought it last year), and I haven't been able to leave it alone for hours on end yet. I'm afraid it might burn down my house! My mom uses hers all the time without worrying, but I'm not used to that at all. So I'm slowly forcing myself to leave the house for short periods of times and gradually lengthen my time away, working myself up to 12 hours for when I have to work.

Chicken and Guacamole Tostadas

Blog, I’m sorry.  I feel horrible for not posting for just over a week, but life’s been busy with work, completing homework that I’ve procrastinated, Marlina home (yay!), spending time with family, ect.  After failed attempts at Easter treats, it left me in a terrible mood. I apologize for not posting anything!  I do hope everyone enjoyed their holiday, and spent lots of time with family and friends.  I hope the next holiday I will be more prepared (I’m sure I will!).

Spanish Chicken with Chorizo and Potatoeskj          mmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmkkkkkkkkkkkkkkkkkkkkkkkkkkk
I love recipes that you can just throw together and leave alone while it cooks and the results would be the same compared to a recipe that’s more hands-on or needs time to marinate.  This is an example of one of those recipes.  It’s incredibly simple, and the flavors work great together, well, for the most part.  The only thing I will say for this recipe is that the orange flavor didn’t come through as much as I thought it would-it was muted.  In the future I think I will add orange slices to see if more of the flavour comes through.  I first made this recipe for Valentines Day but was not impressed with the results-I thought it the chicken was too oily.  To counter that, I added a breaded crust and it seemed to work perfectly with the dish. There was a limited amount of clean up to do, so this recipe brings major bonus points in my books.  Other than that, I really have no complaints.  I love chicken, so this recipe was a no-brainer.  Give it a try, it's worth a shot!
