BLT-Styled Panzanella Salad

BLT’s are such a classic-it’s no wonder they are on my top 5 sandwich list.   Of course, it’s even better deconstructed into salad form.  Genius!  I’ve been thinking & planning on making this salad for quite some time now, so I thought I’d better get on it.  It’s super easy & comes together quickly.  The dressing is slightly garlicky, so don’t use so much if you don’t like it-we both thought it was perfect but then again, we are garlic lovers!

Summer Berry Salad with Poppy Seed Dressing

 
Finding inspiration to eat healthy can be difficult if you don’t have the right salad..trust me, I know.   Even though I love each one I post on here, I need some variation.  I’ve had this recipe for quite some time now and we enjoy it every time I make it-it’s simple and comes together quickly!  The poppy seed dressing really makes this salad special, and gives it a refreshing and unique flavor.

Bacon, Eggs, Mushroom & Mixed Green Salad with a Warm Bacon Dressing

I’m trying to be healthier lately…but I'm failing.

Spring means salads, eating healthier and running more.  I need to get my butt back into shape!  I have some goals for this year that I hope to accomplish.  I’ve posted a lot of good sweets lately, and it’s time to refocus!  Even though this salad is great, it’s not one of the healthiest salads out there.  I’m just warning you-because it IS addicting!  I mean, bacon, eggs & sautéed mushrooms…made into a salad is pure heaven!  The warm bacon vinaigrette is perfect with it.  You don’t have to add all the dressing, but if you refrigerate the dressing you may want to warm the container with some warm water so that the dressing is smooth.

Fall Salad with Pomegranate Vinaigrette

I know I’ve talked about fall a lot lately, but today it’s all about snow.  Seriously, it’s freaking cold outside, it might just snow any day now!  I guess this wouldn’t exactly surprise me, considering I live in Northern BC.  I just need to prepare myself mentally for the cold we are about to experience!

Glory Bowl + It's Our Anniversary! 

It’s been feeling a lot like fall lately, and I’m actually excited for a change in season.  I love watching the leaves turn color and cool mornings with hot drinks.  Today marks one of two things: a) 6 year anniversary with the boy and 2) my birthday is month from today and I turn the big 2-5.  A quarter of a century year old.  I have mixed feelings about this.  But let’s focus on today!

Roasted Potato Salad with Honey-Mustard Dressing

I get so excited about food-especially at this time of year.  These new potatoes are from my parent’s garden and I’ve been reeking in the benefits of their hard labor.   They’ve supplied me with produce for the past few weeks and I love it!  I’ve been dreaming of making this salad long before the potatoes were ready so I was pretty stoked to receive them.  The options are endless-although they are perfect just boiled.  No need to add butter with these babies-they melt in your mouth!

Quinoa with Roasted Beets & Chive Vinaigrette

Quinoa…my favorite super food.  I’ve posted just a few of my favorite recipes.    Now I am adding another to this blog, and I sincerely hope you like it.  The earthy flavors from the beets pairs well with roasted garlic, feta & toasted walnuts and give this salad a nice flavor.  I’ve usually served this as a side to chicken, but I suppose any meat will do.  Or even by itself!  The vinaigrette isn’t overpowering, but subtle-which is why it goes so well with this salad.

Buffalo Chicken Salad with Creamy Avocado Ranch Dressing

 I have an unfortunate story related to this meal.  I don’t know about you, but it drives me nuts when I have a lot of dishes in the sink.  Last week, I was waiting for the oven to rise to 475 degrees and so I started washing the dishes to kill the time.  Unexpectedly, a glass cup broke in my hand, thus resulting in a trip to the emerg department.   I ended up receiving a total of 9 stitches to my right index finger, but was happy to report I was in and out in less than 1 hour.  Unfortunately those stitches are still with me (and will be for a total of 2 weeks!) and it’s still slightly sore....but it definitely could have been worse for sure!

The weekend is here, hooray! Brown-Rice Salad with Spinach and Tomatoes

Did everyone have a lovely long weekend?  We sure did.  Gavin and I went camping overnight on our favorite lake, and despite the blustery weather we had for the majority of the trip, we enjoyed ourselves thoroughly and can’t wait to do it again.  We were lucky enough to catch some fish to take home with us the next day.  I was so excited to eat it-Gavin is the ‘king’ of cooking fish.  So I, quite happily, settled on making a side salad.

Wild & Wonderful Salad

A couple years back, I attended a course in Vancouver for work.  We had lunch provided by a catering company (for the life of me I can’t remember what it’s called) and had this wonderful salad.  We picked apart this salad over lunch and the next day, our instructor provided us the actual recipe.  Over the years, I’ve made and altered this recipe plenty of times to the point where I don’t need the original recipe.  And now that I completely lost it, I am sad to say I don’t know where or who to give this recipe credit to.   So if anyone recognizes it, please let me know and I will gladly source it!
