Thai Chicken Pizza
Pizza
is just one of those things that I don’t get too excited over. This is an extremely rare occurrence. I seem
to have developed an aversion to it when I was younger and have yet to get over
it completely. I’m an extremely picky
individual (you might have noticed this already) and so it’s difficult to find
a pizza that will excite me. Call me
crazy-but when I do find one I love, I love it a lot!
When
I first saw this pizza it got my attention.
It uses Thai flavors, so naturally, it excited me. Peanut butter mixed with sweet chilies to
create a delicious sauce to spread over the pizza. It’s not a spicy pizza, but I suppose you may
add sriracha chili sauce if you want to some heat. I didn’t precook my crust-It was quite thin
and so it didn’t take too long to cook.
Overall, it was a meal that was eaten very quickly(much too quickly for
my liking)!
Thai Chicken Pizza
Makes 1 pizza
INGREDIENTS
For
the sauce:
2
teaspoon peanut butter
1
1/2 tablespoon soy sauce
2
teaspoon rice vinegar
4
teaspoon sweet chili sauce
½
teaspoon sesame oil
1
teaspoon sugar
2
teaspoon fresh ginger, finely minced
2
tablespoon warm water, for thinning the sauce (more to taste)
For the chicken:
1
½ cup cooked, shredded chicken
1
½ tablespoon peanut butter
1
tablespoon sweet chili sauce
½
tablespoon soy sauce
For the pizza:
1
pizza crust
1
cup mozzarella cheese
½
red bell pepper, diced
¾
cup julienned carrots
¼
green onions, sliced
2
Tbsp fresh cilantro, minced
2
Tbsp fresh basil, minced
2
Tbsp cashews (or peanuts), roughly chopped
additional
sweet chili sauce for drizzling
DIRECTIONS
Preheat
the oven to 375 degrees.
With
a small bowl, stir the peanut butter, soy sauce, vinegar, sweet chili sauce,
sesame oil and ginger. Adjust as per
desired taste. Thin with 2 tablespoons of water.
In
a medium sized bowl, combine the chicken with the peanut butter, chili sauce
and soy sauce.
Spread
the peanut butter over the pizza crust. Sprinkle with the shredded chicken,
cheese, bell peppers, green onions and carrots.
Bake for 15-20 minutes, until the crust is golden and the cheese is
melted.
Sprinkle
with cilantro, basil and cashews. Drizzle with additional sweet chili sauce if
desired.
