Spicy Roasted Shrimp Sandwiches with Chipotle Avocado Mayonnaise

I never was a fan of sandwiches until I met Gavin.  His love for them made me appreciate them more and more.  He’s what you would call ‘a sandwich connoisseur’-he’s sooo opinionated about them.  His standards for them make mine high.  I think our favorite is a Chicken Clubhouse sandwich from a local restaurant in town-this is the best sandwich you will taste.  I wouldn’t attempt to recreate it because it’s so good!!

I think what I enjoyed most about this sandwich was the shrimp.  It was juicy & roasted to perfection.  The shrimp itself aren’t too spicy but the mayonnaise kicks it up a notch-a welcomed addition.  I love the heat.  The mayo makes more than what you actually need for the sandwiches, but you have plenty leftover for future sandwiches. Great news!

So, if you’re looking for lunch ideas, look no further, okay?
