BBQ Chicken Pizza with Cauliflower Crust

There are some dinners that I want to share with you immediately. This is definitely one of them! I’ve been feeling extremely guilty over the amount of sweets I’ve baked recently (I am sharing these recipes with you soon!:D) and feel the need to balance this by cooking healthy meals.  After spending some time perusing I came across this recipe for a cauliflower crust.  It knocked my socks off!  I have to admit it takes some work, but it’s completely worth it.  And you can feel good about eating it!

The pizza itself is simple, yet delicious.  And although the crust has a slightly different (but better) taste & texture than what you are used to, you’ll get used to it-and fast.  I can’t believe how much flavor the crust packs in!! I know I am focusing a lot on the crust, but it’s hard not to.  You can adjust the toppings to your preference and the type of pizza you’d like-but I had such a huge craving for a BBQ pizza and thought it worked perfectly!
BBQ Chicken Pizza with Cauliflower Crust
Makes 1 pizza

INGREDIENTS
For the cauliflower crust:
1 head cauliflower (about 350 grams), grated
1/4 cup coconut flour
2 tablespoon almond flour
1/4 teaspoon salt
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
2 tablespoon nutritional yeast
2 large eggs

For the pizza toppings:
½ cup BBQ sauce
1 cup shredded chicken
½ cup cilantro
½ cup red onion, sliced thinly
½ red bell pepper, sliced thinly
1 cup shredded mozzarella

DIRECTIONS
For the cauliflower crust:
Place a baking sheet in the oven & preheat to 475 degrees.

Place the grated cauliflower in a microwave bowl (or alternately, steam) for about 4 minutes. Place the cooked cauliflower in a fine mesh sieve and press down real hard to drain the excess liquid.

Add the cauliflower into a bowl & mix with the remaining ingredients. Continue to mix until they are well incorporated and resembles a dough.

Place a piece of parchment paper on a cutting board. Dump the dough in the center.  Form it into a ball, then flatten down gently into a disk (about 8-10 inches in diameter).

Slide the crust on the hot baking sheet that’s been heated in the oven & bake for 8-11 minutes.  The crust will be golden brown & remove from the oven & place the toppings (per below) on the pizza.

Decrease the oven temperature to 450 degrees.

For the pizza toppings:
Spread the BBQ sauce over the pizza, leave about a half inch-inch border around the edge. Top with chicken, ¼ cup cilantro, red onion, red bell pepper & mozzarella. Bake for approximately 10 minutes, or until the cheese is melted completely.
