Spicy Roasted Shrimp Sandwiches with Chipotle Avocado Mayonnaise
I
never was a fan of sandwiches until I met Gavin. His love for them made me appreciate them
more and more. He’s what you would call ‘a
sandwich connoisseur’-he’s sooo opinionated about them. His standards for them make mine high. I think our favorite is a Chicken Clubhouse
sandwich from a local restaurant in town-this is the best sandwich you will
taste. I wouldn’t attempt to recreate it
because it’s so good!!
I
think what I enjoyed most about this sandwich was the shrimp. It was juicy & roasted to perfection. The shrimp itself aren’t too spicy but the mayonnaise
kicks it up a notch-a welcomed addition.
I love the heat. The mayo makes
more than what you actually need for the sandwiches, but you have plenty
leftover for future sandwiches. Great news!

Spicy Roasted
Shrimp Sandwiches with Chipotle Avocado Mayonnaise
Makes 4 servings
INGREDIENTS
1
pound medium shrimp, peeled and deveined
1
tablespoon olive oil
1
teaspoon cumin
2
teaspoon garlic powder
1
teaspoon chili powder
Kosher
salt and freshly ground black pepper, to taste
For the chipotle
avocado mayonnaise:
2
chipotle peppers, in adobo sauce
1
avocado, pitted and chopped
1/4
cup mayonnaise
1/4
cup fat free sour cream
Juice
of 1 lime
1/4
teaspoon salt
1
baguette, cut into 4 equal pieces, for
serving (toasting is optional)
Spinach
leaves, for serving
Sliced
tomatoes, for serving
Sliced
avocado, for serving
INSTRUCTIONS
Preheat
the oven to 400 degrees. Line a baking sheet with parchment paper.
In
a large bowl, combine the shrimp, olive oil, cumin, garlic, chili powder, salt
& pepper. Place the shrimp on a
prepared baking sheet & place in the oven & roast until pink, about 6-8
minutes.
In
a blender, combine the avocado, mayo, sour cream, lime & salt. Blend until
smooth.
Serve
sandwiches on a baguette with spinach, tomato, avocado & shrimp with
chipotle avocado mayonnaise.
