Garlicky Shrimp Sandwiches

As I mentioned before, Gavin loves sandwiches.  I always like trying to find new ones that he would love.  So far, none of them can compare to a Chicken BLT that’s made at a local restaurant.  It’s literally the best sandwich ever made.  But we are not talking about that-though I find these pretty close.  I made these sandwiches last year and he loved them-but then I never made them again.   Luckily, I had them on my list to make again-score!  :)

Baked Chicken Nuggets

Chicken fingers, among sandwiches, are one of Gavin’s favorite foods.  Chicken nuggets come pretty close, just because they are practically the same thing.  I’m not even joking.   It’s not unusual for him to order them when we dine out.  It’s kind of embarrassing-which is why I like going out for sushi.  Totally justifies itJ.  He’s such a kid at heart-I can’t help but love him!

Spicy Roasted Shrimp Sandwiches with Chipotle Avocado Mayonnaise

I never was a fan of sandwiches until I met Gavin.  His love for them made me appreciate them more and more.  He’s what you would call ‘a sandwich connoisseur’-he’s sooo opinionated about them.  His standards for them make mine high.  I think our favorite is a Chicken Clubhouse sandwich from a local restaurant in town-this is the best sandwich you will taste.  I wouldn’t attempt to recreate it because it’s so good!!

Egg & Avocado Sandwiches

After a long day at work, I try to make something light and easy for dinner.  I found that I’ve made this sandwich frequently over the past month, and have yet to get tired of it.  It requires minimal prep-I usually serve it with one piece of rye and save the remaining for the next night. If you’re making it for two people I would recommend doubling the recipe.

Tomato & Goat Cheese Tarts

I bought Ina Garten's Back to the Basics last year while in Vancouver.  I remember that during this trip, Marlina and I talked about starting a blog.  I was so excited at the idea so I splurged and bought 4 cookbooks at Chapters, spending a ridiculous amount of money.  To this day, I haven't regretted those purchases.  I'm slowly working my way through Ina's books and love how simple (for the most part!) and delicious the recipes are.  I bookmarked this recipe several times and was surprised that I never made it sooner.  Now I can say that I have, and will be making it more in the future.
