Garlicky Shrimp Sandwiches

As I mentioned before, Gavin loves sandwiches.  I always like trying to find new ones that he would love.  So far, none of them can compare to a Chicken BLT that’s made at a local restaurant.  It’s literally the best sandwich ever made.  But we are not talking about that-though I find these pretty close.  I made these sandwiches last year and he loved them-but then I never made them again.   Luckily, I had them on my list to make again-score!  :)

Mexican Shrimp Cocktail

Lately, I’ve been having a hard time planning dinner- I need to get more organized, and fast!!  I usually try to plan a week in advance but with work being so hectic lately; it’s hard to find the energy.  I guess I shouldn’t complain-steady work is always a good thing.  Except that I have no life-awwwJ.  Anyways, besides my complaining, I was so excited to have days off and it was hard to prioritize what I wanted to make first.  So, I started out with something easy that I knew would be super awesome and wanted to share with you all immediately!

Baked Coconut Shrimp (Healthy!)


I don’t think I’ve posted many shrimp recipes, so this is definitely appropriate.  And it’s a good one!  My mom used to make shrimp all the time and it took years for me to develop an appreciation for it.  Unfortunately, she’s developed a slight allergy to it and can’t have it anymore.  What she used to make with the shrimp I can’t even re-create.  Mhmmm yum!  But trying to get any recipe from her is damn near impossible!

Spicy Roasted Shrimp Sandwiches with Chipotle Avocado Mayonnaise

I never was a fan of sandwiches until I met Gavin.  His love for them made me appreciate them more and more.  He’s what you would call ‘a sandwich connoisseur’-he’s sooo opinionated about them.  His standards for them make mine high.  I think our favorite is a Chicken Clubhouse sandwich from a local restaurant in town-this is the best sandwich you will taste.  I wouldn’t attempt to recreate it because it’s so good!!

Paella

I was introduced to seafood at a very young age.  My mom loved cooking with shrimp & at Filipino gatherings we would eat deep fried squid.  There was a lot more seafood-type dishes, but I never really questioned what it was.  I never even thought twice about eating it!  So it was no surprise that this recipe would pique my interest…and even though it does take some time & effort, it’s well worth it.  I truly have a warm feelings about paella-there is something so special & comforting about it.

Shrimp Tacos

There are a lot of things that I haven’t tried.  I am correcting this, however slow it may be.  I love trying new foods and adding it to my repertoire.  For instance, these shrimp tacos.  I have no clue why I have not tried this before.  I love shrimp and tacos seperately, but the thought never occurred to me to combine the two together.  So glad that I did, because it made for a light, healthy meal in which we both enjoyed.
