Tres Leches Cake

It’s Cinco de Mayo today, and it’s time to celebrate.  Of course, we are celebrating properly-with a cake, no less!  It’s a good one too-you won’t forget it.  I will be making it again in no time as this cake now ranks on my top 5 list.

Coconut Cupcakes with Toasted Coconut Frosting

I love Easter.  Marlina is usually home, and this year she actually stayed awake and helped bake cupcakes!  Yes, I felt like I must share this:D  She tells me that she doesn’t take naps at home in PG…but finds my couch way too comfy and calling her name (constantly!).

Baked Coconut Shrimp (Healthy!)


I don’t think I’ve posted many shrimp recipes, so this is definitely appropriate.  And it’s a good one!  My mom used to make shrimp all the time and it took years for me to develop an appreciation for it.  Unfortunately, she’s developed a slight allergy to it and can’t have it anymore.  What she used to make with the shrimp I can’t even re-create.  Mhmmm yum!  But trying to get any recipe from her is damn near impossible!

 Samoas Cookies

Have you ever seen a cookie recipe that you fall in love with before even trying?  That’s what happened with these cookies.  I had no idea they were actually an inspired version/re-creation of the famous Girl Guide cookies (although they look slightly different than photos I looked at but I imagine they taste the same).   They have a lot of my favorite ingredients-a buttery shortbread base with a chewy caramel coconut topping and a chocolate drizzle.  They are simply delightful, especially with a big glass of milk!
