Apple Crumb Cake

I’m all about making a fancy cake and decorating it to the nines, but sometimes it’s nice to make a cake where you don’t and it still knocks your socks off anyways.   This cake is simple yet incredibly crowd pleasing.  I’ve made this cake plenty of times already and everyone loves it each time.  The cake batter is layered with apple slices then topped with a perfect crumb layer-so scrumptious!

Chocolate Oreo Cake

It’s Gavin’s half birthday today (and his pa’s actual birthday-Happy Birthday!) and it’s only normal to celebrate!  Gavin’s dad loves chocolate so I felt this cake was definitely appropriate.  I’ve made this cake many years ago (before I started the blog) and scrapbooked the recipe.

It’s Cinco de Mayo today, and it’s time to celebrate.  Of course, we are celebrating properly-with a cake, no less!  It’s a good one too-you won’t forget it.  I will be making it again in no time as this cake now ranks on my top 5 list.

Blood Orange Pound Cake

 As promised, I am continuing on my obsession with blood oranges. Unfortunately, this is the last post. L I think I did pretty good job considering I only grabbed a {large} handful of them!  I made a Blood Orange Poppy Seed Cake and many, many Blood Orange Magaritas.  Yum!!   I am already excited for next year-I have a list of things I want to make already!

Peaches & Cream Cake (Happy 2nd Birthday, Bloggie!)

Today this bloggie turns two!  It almost feels surreal that two years has passed already-it certainly doesn’t feel that way.  We’ve published over 162 posts (Whoah. Wait. What!?), a tonne of sweets…and I mean a TONNE!  But we’ve also posted some appetizers & main dishes for you.  Everything we put on this blog is simply recipes that we love and want to share with you.  We want to say thank you-by leaving a comment, liking a post on FB, or sharing by word of mouth-it brightens up our days & puts a smile on our faces.  We love that you’ve stayed and perused around.  We can’t say thank you enough! J
One of the best things about having a blog is that it’s another way to express ourselves-and while it looks easy, it's not!!  First off, we start with baking & cooking, followed by styling & photography.  After that process is complete it all comes together by editing photos and writing a post.  We still find it difficult but try to challenge ourselves each time.  And while we have a long ways to go, it’s been such an enjoyable experience.  So I will say it again-happy birthday, bloggie! ;) Excited for many more years with you!
To celebrate this occasion appropriately, we made a Peaches & Cream Cake.  It’s simple and it has a few nice additions that makes it truly unique & stand out.  It’s a moist, light cake that is decorated so elegantly.  My only wish is that I had some in-season peaches for this!  Canned worked well, but I would have preferred fresh.  Can’t have everything!
I am always so THRILLED when Marlina comes to visit.  It’s a good day when we can bake together!  Usually, she sits and drinks tea while yelling instructions at me.  I kid, I kid.  She just bosses me around-I always get the short end of the stickJ.  We had a great time baking this cake and thought it would be perfect for this special day {and it is!}. Thank you all again for your readership + support! 
Peaches & Cream Cake
Makes 1 8-inch round cake

INGREDIENTS
for the cake:
1 ½ cup all purpose flour
1 ½ teaspoon baking powder
¼ teaspoon salt
2/3 cup unsalted butter, at room temp
¾ cup granulated sugar
3 eggs
3 tablespoons milk
4 teaspoons lime zest
2 teaspoon vanilla

for the topping:
2 tablespoons lime juice
2 tablespoons granulated sugar

1 ½ cup heavy cream
2 tablespoons icing sugar
3 large peaches, unpeeled & cut into wedges (alternatively, you may use canned peaches for this-about 1½ cup-2 cups)

DIRECTIONS
Preheat the oven to 350 degrees. Butter a 8-inch round cake pan.  Line the bottom with parchment paper. Lightly sprinkle with flour.

In a medium sized bowl, stir together the flour, baking powder & salt. Set aside.

In a stand mixer fitted with a paddle attachment, beat the butter and sugar until light and fluffy. Add in the eggs, 1 at a time, beating well after each addition. Beat in the milk, lime zest & vanilla. Reduce speed and gradually beat in the flour mixture until blended.

Transfer the batter to the prepared pan. Smooth the tops. Bake in the center of the oven for about 35 minutes, or until a cake tester is inserted in the middle of the cake & comes out clean.

In a small saucepan, boil the lime juice & the granulated sugar until the sugar has dissolved, then set aside to cool.

Cool the cake for approximately 15 minutes, then turn on a wire rack. Remove from parchment paper then brush the lime syrup. Cool the cake completely, for about 45 minutes.

In a stand mixer fitted with a whisk attachment, whip the cream & icing sugar together until soft peaks form. Spread the cream on top of the cake, then top with peaches.  Sprinkle with zest.

Yellow Butter Cake with Chocolate Frosting

Happy New Year!

I hope you all had a safe & wonderful New Years.  Ours was pretty good (we went to a house warming/new year’s party) and managed to stay up until midnight-pretty much a record for us.  I think one of my favorite moments of the night was when we released Chinese lanterns-it was a beautiful night. I wish I would have snapped a picture, but hey, it would've ruined the moment

Chocolate Pumpkin Mini Bundt Cakes

I’ve been loving the cool mornings and intermittent sunshine...leggings, sweaters, sippin’ on some hot tea & baking in a nice cool house are definitely perks to this season!  I LOVE it!! So I figured I should continue on with my pumpkin obsession..I'm so terrible!  A chocolate pumpkin recipe  has been on my list for the longest time now-I finally bumped it up.  I've made my share of pumpkin recipes this fall season so far (here, here & here!). So yummy!! I thought that this one is great-the cake is quite rich, moist & the pumpkin is subtle with the chocolate flavor.  They are definitely a match made in heaven!!!

Enough with all the pumpkin posts already…..;)  I have so many more recipes that I want to try out, that I might be all ‘pumpkin-d’ out before Thanksgiving!  Although that is slightly impossible to believe-I am hoping it won’t happen!!

Peppermint Mocha Cake

I realize I’ve gone a little drink-crazy this week.  I just felt that I needed to share the cran-raspberry juice and chai tea with everyone ASAP.  I’ve also wanted to share this cake with you, but figured I would save the best for last.  It is inspired by the famously known Peppermint Mochas from Starbucks.  I tried this drink over a week ago and immediately thought: Oh man, I need to make this into a cake.  Now, that’s something that doesn’t happen often so I knew I had to follow though.  I had super good feelings about this cake and had planned what I would do with it over the course of the week.

Banana Split Surprise Cake

And…We’re back!  After a much longer break than anticipated from the blog, we are back in ‘business’.  I can’t wait to share with you some pictures of my older sister and new brother’s wedding in Ucluelet.  We truly had a fabulous time-met some amazing new people (some of now is familyJ) and explored what the island had to offer…and there’s beauty with every step.  Anyway…I will tell you more about it soon!  But first, I had something to share with you….CAKE!

The week is half-over.  Thank goodness.  I can’t wait for the weekend!  I’m pretty excited-it will be really busy but fun.  I am hoping to make some goodies for my friend’s bachelorette party, go out for a birthday dinner, work on some homework and of course-baking!
