Apple Crumb Cake
I’m
all about making a fancy cake and decorating it to the nines, but sometimes it’s
nice to make a cake where you don’t and it still knocks your socks off
anyways. This cake is simple yet
incredibly crowd pleasing. I’ve made
this cake plenty of times already and everyone loves it each time. The cake batter is layered with apple slices then
topped with a perfect crumb layer-so scrumptious!

Apple Crumb Cake
Makes one 6-inch
round cake (may use a pie plate as well)
INGREDIENTS
for
the bottom (cake) layer:
¾
cup all-purpose flour
¼
cup brown sugar
1
teaspoon baking powder
1
teaspoon ground cinnamon
1/8
teaspoon baking soda
1/8
teaspoon salt
¼
cup + 2 Tablespoons of milk
1
teaspoon pure vanilla extract
¼
cup vegetable oil
1
large egg
for
the apple layer:
2
large honey crisp apples, cored & sliced thinly
2
tablespoons brown sugar
1
teaspoon ground cinnamon
1
tablespoon apple cider vinegar
for
the crumb topping:
½
cup brown sugar
1
teaspoon ground cinnamon
½
teaspoon salt
½
cup unsalted butter, melted and cooled
1½
cup all-purpose flour
DIRECTIONS
Lightly
grease a 6 inch round springfoam pan (or a pie plate if using!) Preheat the
oven to 375 degrees.
for
the bottom layer:
In
a medium sized bowl, mix together the flour, sugar, baking powder, baking soda,
cinnamon and salt. Gently whisk in the milk, vanilla, oil and egg-whisking
until mostly smooth.
for
the mid-layer:
Quickly
clean the bowl used for the cake. Toss together the apples, brown sugar,
cinnamon and apple cider vinegar. Arrange over the batter.
for
the crumb topping:
In
a medium sized bowl, mix together the brown sugar, cinnamon, salt & flour until
well combined. With a fork, fold in the butter until coarse and crumbly. Top
over the apple mixture and bake for 30 to 35 minutes. Allow to cool completely
before slicing.
