Eating Local: Open-Faced Breakfast Sandwiches

I try and get my food as local as possible.  I’m not perfect, and I do fail with this at times, but I’m starting to get into the habit of always having this on the back of my mind when I enter the grocery store. Small changes can make a big difference in the long run.

There’s nothing that makes me more giddy and excited when I can create a meal with fresh, local ingredients.  Northern BC has a short growing season so there’s a little bit of a challenge with that.  But, there’s even more of a challenge during the winter months.  I love supporting local restaurants, especially ones that use ingredients from local farmers.  My dad has been a huge donator of freshly grown veggies, eggs & chicken to this household.  We purchase our beef locally (& yearly) and enjoy the benefits year round.  Farming was important growing up and my parents continue to inspire me constantly.  I’m always learning from them!

BLT-Styled Panzanella Salad

BLT’s are such a classic-it’s no wonder they are on my top 5 sandwich list.   Of course, it’s even better deconstructed into salad form.  Genius!  I’ve been thinking & planning on making this salad for quite some time now, so I thought I’d better get on it.  It’s super easy & comes together quickly.  The dressing is slightly garlicky, so don’t use so much if you don’t like it-we both thought it was perfect but then again, we are garlic lovers!

Bacon, Eggs, Mushroom & Mixed Green Salad with a Warm Bacon Dressing

I’m trying to be healthier lately…but I'm failing.

Spring means salads, eating healthier and running more.  I need to get my butt back into shape!  I have some goals for this year that I hope to accomplish.  I’ve posted a lot of good sweets lately, and it’s time to refocus!  Even though this salad is great, it’s not one of the healthiest salads out there.  I’m just warning you-because it IS addicting!  I mean, bacon, eggs & sautéed mushrooms…made into a salad is pure heaven!  The warm bacon vinaigrette is perfect with it.  You don’t have to add all the dressing, but if you refrigerate the dressing you may want to warm the container with some warm water so that the dressing is smooth.

Stuffed Mushrooms with Bacon & Boursin

I’ve always loved mushrooms but they were forbidden in our household as a child.  When we were young, Marlina had an adverse reaction to one so my parents assumed she had an allergy..and that was the end of having them in the house.  But once in a while Marlina would sneak a mushroom {at a friends!} with no type of adverse reactions.  However, when my mom found out she was doing this, well, let's say it was not a pleasant experience!

Cheesy Party Bread

We had a Dr. Who party with appetizers earlier last month, and I’ve been DYING to try this recipe.  I needed an excuse to make it, and this gave me a reason!  I wanted to hog it during the 50th anniversary special, but I had to be polite.  Hahhaha-darn social standards!!!

Bacon-Wrapped Water Chestnuts

A brief absence from the blog has made me miss it so much!!  I went to Vancouver for a couple days on union business.  It was great-I learned lots & am proud to be a part of it.  When I was down there, I found out that FBC 2014 will be in Vancouver next year-exciting!  Mar and I are planning on going-are you?!! :D

Arugula, Goat Cheese & Mushroom Breakfast Pizza

I have a tendency to be drawn to slightly unhealthy recipes, and this would be a prime example. I’m such a sucker.  It’s a good thing I make an effort at keeping everything in moderation & drag myself out for a run.  I’ve made this pizza once before, so it was a no brainer to make it again after spending the night dancing & having a couple of drinks with some good friends.  You can only imagine what that might entail!!!

Perogies

Pierogi, Perogy, Pierogy… it’s all the same.  These babies rank in the top 5 of ultimate comfort foods in my books.  And so easy to make!  Although they are slightly time consuming, it goes by quickly when you have a partner on hand.  Gav and I made these over the long weekend and we both LOVED them.  Fry them up with some garlic sausage & onions…nummers!  We froze the rest so we will have plenty left for the future-we don’t eat perogies often but really enjoy homemade ones when we do.
