General Tso's Chicken
I haven’t posted any Asian-inspired meals
lately, and I think it’s about time to do so.
I love cooking with chicken-and anything spicy usually gets my
attention. This is a lightened up version
of General Tso’s chicken which means that there’s no deep frying involved. Perfecto!
The sauce is slightly spicy, gingery and quick to make-less than an hour
so it’s easily a weeknight meal. Serve with rice and you’ve got a perfect
weeknight staple.

BLT-Styled Panzanella Salad
BLT’s are such a classic-it’s no wonder they are on my top 5 sandwich list. Of course, it’s even better deconstructed into salad form. Genius! I’ve been thinking & planning on making this salad for quite some time now, so I thought I’d better get on it. It’s super easy & comes together quickly. The dressing is slightly garlicky, so don’t use so much if you don’t like it-we both thought it was perfect but then again, we are garlic lovers!

Cheesy Quinoa & Cauliflower Bake
My
first experience with quinoa that I can remember is Marlina making this recipe. It was a hit in our house and gone
fast-too fast! This was before quinoa
became so popular. I think what I most
liked about it stands true to this day-it’s healthy & you can feel good
about eating it. Quinoa is definitely one
of my favorite grains to work with-I love using it in salads or as a main dish.
I love the vegetables added to this dish-I don’t eat a lot of cauliflower &
leeks and the combination works out perfectly.
Plus the cheesy cheddar & dill flavor-you can’t beat thatJ Yum! I’ll
be sure to make this before I work-great leftovers & lunch!
P.S. Happy Canada Day!

Summer Berry Salad with Poppy Seed Dressing
Finding inspiration to eat healthy can be difficult if you don’t have the right salad..trust me, I know. Even though I love each one I post on here, I need some variation. I’ve had this recipe for quite some time now and we enjoy it every time I make it-it’s simple and comes together quickly! The poppy seed dressing really makes this salad special, and gives it a refreshing and unique flavor.

Moroccan Lamb & Lentil Stew
It’s
official; spring has sprung and the mornings have been (mainly) sunny and
cool. It warms up slightly throughout
the day, however there is still a bit of a cool touch in the air. I can’t wait for it to be summer! I love heat; I could live in a warm climate
all year ‘round!

Chickpea Burgers with Tzatziki Sauce
Last weekend, we went to visit Marlina & Hank’s new place. We played Settlers of Catan (Marlina was very vicious during that game!), visited, shopped, and ate good food. One of my favorite things I tried out was a chickpea burger. It surprised me-I love a good veggie burger (such as my Big Bertha Burger), but haven’t found one since that would compare. Anyway, this burger left me full for a very long time and more the next day! I had to make one-so I came up with this one!

Chicken Gyros
I can’t even tell you the amount of times I’ve made this meal and have been unable to share with you all-the pictures weren’t quite right. I’m very particular that way, but I'm sure most of you know that by now:). I guess it was the same with the chicken taquitos! I can never give it proper justice. But since I am semi satisfied with the photos, I suppose I can share with you allJ

BBQ Chicken Pizza with Cauliflower Crust
There
are some dinners that I want to share with you immediately. This is definitely one
of them! I’ve been feeling extremely guilty over the amount of sweets I’ve
baked recently (I am sharing these recipes with you soon!:D) and feel the need to
balance this by cooking healthy meals.
After spending some time perusing I came across this recipe for a cauliflower
crust. It knocked my socks off! I have to admit it takes some work, but it’s
completely worth it. And you can feel
good about eating it!

Chicken Parmesan Soup
I love this weather that we’ve been having. It’s been unnaturally warm out lately, not our usual frigid temperatures at this time of year. The coldest it’s been is around -7, which is not so bad!! Several times last week it got over to plus 4. It’s running weather! So, I put on my new pair of ice cleats and went twice-It was so great to be out there again!:) I hope this weather continues and that I can keep it up:D

Cucumber & Tomato Salad
Back in September,
I bought a kitchen gadget for myself as a birthday present. I thought it would be a neat, useful tool,
and would maybe use it every once in a while for fun. Boy, was I wrong – I use it all the
time! The gadget, called “the Spiralizer,”
cuts vegetables into noodles of different thickness, depending on what blade
you insert. This is especially handy,
since I’ve been trying to reduce my gluten and processed foods intake. Now, I can make noodles from cucumbers,
potatoes, squash, yam and zucchini – you name it! It’s something that I’m happy to have, and
I’m even happier to be able to share this recipe (as well as others I have
planned!) with you.

Buffalo Chicken Wraps
I have this crazy obsession with buffalo chicken. I love it-maybe a little too much. I can eat it for days on end. It’s okay though, because I’m always excited to make it:D One of my favorite salads of all time is this buffalo chicken salad I made last year. I haven’t stopped loving it since!

Vegan Eggnog
Christmas is less than 2 weeks away-eek!! I hope everyone has their Christmas shopping done….I think we are almost done, but we still need to go Christmas tree hunting & put up the lights. So excited!! Marlina is coming home on the 18th and I can’t wait for her to come!! All we need is more snow-we’ve hardly had any. I honestly can't believe I'm complaining about this!Saturday, November 9, 2013
No Bake Granola Bars
One of my first blog posts were about granola bars. Holy cow, it’s been almost 2 years. Almost 2 years that I completely fell in love with making granola bars, and it was time I tried a different recipe. Preferably a recipe that quick & no bake. This one comes together in no time & is so easy peasy! The chocolate drizzle is optional but highly recommended. Can you ever say no to chocolate? The answer is no!

Fall Salad with Pomegranate Vinaigrette
I
know I’ve talked about fall a lot lately, but today it’s all about snow. Seriously, it’s freaking cold outside, it might
just snow any day now! I guess this
wouldn’t exactly surprise me, considering I live in Northern BC. I just need to prepare myself mentally for
the cold we are about to experience!

Glory Bowl + It's Our Anniversary!
It’s
been feeling a lot like fall lately, and I’m actually excited for a change in season. I love watching the leaves turn color and cool
mornings with hot drinks. Today marks
one of two things: a) 6 year anniversary with the boy and 2) my birthday is
month from today and I turn the big 2-5.
A quarter of a century year old.
I have mixed feelings about this.
But let’s focus on today!

Raw Cashew Dreamcake
This
past weekend seemed to revolve around food.
Too. Much. Cooking. & Baking.
Just kidding-I loved it!! We went
to the farmers market and received fresh baby potatoes, garlic, tomatoes, snap
peas & beets…all from my parent’s garden!
I can’t believe they don’t charge me-I am seriously one lucky girl. In return, we took them out for lunch &
made Sunday dinner for them (local beef ribs & potato salad!) so I think
we made it up to them! Of course, I had to make
pie for dessert, plus cookies & bars….yum!

Quinoa with Roasted Beets & Chive Vinaigrette
Quinoa…my
favorite super food. I’ve posted just a
few of my favorite recipes. Now I am adding another to this blog, and I
sincerely hope you like it. The earthy
flavors from the beets pairs well with roasted garlic, feta & toasted
walnuts and give this salad a nice flavor. I’ve usually served this as a side to chicken,
but I suppose any meat will do. Or even
by itself! The vinaigrette isn’t
overpowering, but subtle-which is why it goes so well with this salad.

Niçoise Salad Sandwiches
Happy
Friday!
This
month has passed by quickly, but not to my surprise. I’ve been having a hard time fitting
everything in lately-work has been crazy (unfortunately a part of this is my
own fault for agreeing to do so much) and I don’t anticipate it to slow down
until the end of July. We’ve planted our
flower gardens with perennials and our herb garden (I’m so in love with this
already) is finished. I’ve also joined a
softball team so well…you get the idea.
I’m swamped!
