Slow Cooker Beef  & Vegetable Minestrone

At the risk of sounding like a whiner, it’s SOO frickin’ cold outside!  I can’t stand these rapid temperature drops-it’s been so hard to properly adjust.  It was way below -20 this morning, and I didn’t want to leave the house.   But, we did anyway and froze out butts off.  I think my only savior was keeping this soup in mind-knowing it would warm me up for days on end! J

Chicken Parmesan Soup

I love this weather that we’ve been having.  It’s been unnaturally warm out lately, not our usual frigid temperatures at this time of year.  The coldest it’s been is around -7, which is not so bad!!  Several times last week it got over to plus 4.  It’s running weather!  So, I put on my new pair of ice cleats and went twice-It was so great to be out there again!:)  I hope this weather continues and that I can keep it up:D
