Slow Cooker Beef  & Vegetable Minestrone

At the risk of sounding like a whiner, it’s SOO frickin’ cold outside!  I can’t stand these rapid temperature drops-it’s been so hard to properly adjust.  It was way below -20 this morning, and I didn’t want to leave the house.   But, we did anyway and froze out butts off.  I think my only savior was keeping this soup in mind-knowing it would warm me up for days on end! J

Skillet Lasagna

Okay, so here’s the deal-I RARELY cook pasta-type dishes.  But for some reason, I decided to put this one back to back with the Blackened Seafood & Chorizo Pasta.  I have no idea what’s going on, but I think I need my head checked.  Just kidding!

Gavin LOVES lasagna, but I find it’s a tad expensive and time consuming to make, so I’ll only make it for special occasions.  But this, my friends, changes all of that. 
Because:  a) it only takes 45 minutes to make. 
                b) it’s super easy.
                c) inexpensive.
                d) minimal prep.
&, lastly,   e) one skillet…say what!

Cross Rib Roast with Cabernet au Jus

So, I don’t know if anyone else has the same problem …but Gavin tends to take over when I cook roasts or chicken.   This explains the poor selections of meats on the blog!!!  It’s not due to the fact that he doesn’t trust me, but because he also loves experimenting.  I don’t mind for the most part but once in a while I like to try.  And I had such a huge craving for a roast the other day, I had to make it!

Mexican Pasta Bake


I know I’ve mentioned this before, but Mexican food is one of my favorites.  Trouble is, I always default to making the same meals.  Not that there’s anything wrong with that, but sometimes it doesn’t hurt to spice things up.  So I was pretty stoked when I concocted this out of the blue.  It took a couple tries to perfect it, but we both really enjoyed the way it turned out.  It’s a cross between the best of Mexican flavors & a creamy mac and cheese-um yum! You know you want to make it.  It may just be your best decision yet:)

Chili

The first day of spring was the other day…I guess Mother Nature must have missed the memo-or has a really sarcastic sense of humor.  Snow, really?  What a cruel joke!  I am eagerly anticipating the days when I get to roast in the sun, read a book, and suffer from ridiculously awesome tan lines.  We normally get a grand total of 10 days of this (I feel I am being generous with this), but I’m not complaining.  I’ll take what I can get!  I am one of the lucky ones… I've only burnt twice in my life, and I darken quickly with sun.  I realize I am babbling.  And dreaming for warmer days.  I just wish for spring to finally come to melt all this snow and we can move on with summer weather!

Mongolian Beef

Once in a while, we get a craving for Chinese food.  We hardly ever go because it’s so unhealthy.  Plus, it’s always hit or miss in this town.  My absolute favorite dish is sweet & sour chicken *drool*, while Gavin’s is Mongolian Beef.  I generally will pick at his dish, wishing I got something *slightly* healthier.  So when I first saw this recipe, I was immediately intrigued.  I knew it would be a hit with Gavin.  While the original recipe was good, I decided to add vegetables that we would normally find at our regular restaurant.  I love the sliced ginger-a nice addition to the dish and a little heat from the Serrano pepper. We used half and found it was very mild, so I think if you want the spicier Mongolian Beef, add in the full Serrano.  I know I will next time I make it!  Which will be soon, considering it went pretty quickly around here.
