Honey & Sriracha Baked Drumsticks

 
Happy Tuesday-did everyone (in Canada) enjoy their long weekend?  I got back to town on Friday morning and was excited to be home and rip apart our deck. I didn’t have to do that much-Gavin had taken care of most of it :D. It was a beautiful day-one of the best so far.  I can’t wait to have more this summer.  We will begin to rebuild the deck it next weekend and I’m really looking forward to it-we’ve needed to do it for a long time!

On a side note, our garden is starting to sprout up and show some life.   Our first time…I feel so very fortunate to have success-but we will give it another month or two before I brag anymore!!  We’ve got carrots, beets, beans, swiss chard, strawberries, spinach & lettuce planted.  Can’t wait to see how it’ll turn out!

I made these twice over the weekend and loved them…they are easy to make and you can serve them with just about anything-I chose quinoa and a green vegetable salad.  Sriracha has become one of our favorite sauces in the household-it packs a punch, and even though a small amount of the heat is lost during the cooking process, it’s still spicy.   The honey adds some sweetness to the drumsticks and the taste of the garlic from the Sriracha comes through-delicious.  This juicy chicken is perfect for any Sriracha lover!
Honey & Sriracha Baked Drumsticks
Makes 4 servings (2 drumsticks each)

INGREDIENTS
1.5 pounds (approximately 8) chicken drumsticks
2 tablespoons olive oil
Salt and pepper

For the glaze:
¼ cup sriracha
¼ cup honey
1 tablespoon lime juice
1 tablespoon olive oil

DIRECTIONS
Preheat the oven to 425 degrees. Line a baking sheet with foil, then with parchment paper.

In a medium-sized bowl, mix the chicken with the olive oil. Arrange on a baking sheet and sprinkle with salt and pepper.  Bake for 40 minutes, turning halfway through.  

In a small bowl, mix the sriracha, honey, lime juice & olive oil together.

After the drumsticks have baked for a total of 40 minutes, remove the pan from the oven and brush the drumsticks with the Sriracha mixture. Bake for an additional 10 minutes.

After the 10 minutes, remove the drumsticks from the oven. If extra browning is required or desired, turn on the broiler and watch carefully for 1-2 minutes. Remove from oven and serve.

    1. Hi Chuck!
      These drumsticks bake for 40 minutes (turned halfway though), then brushing with the sauce and baking for an additional 10 minutes. Broiler time is 1-2 minutes if needed. Total time: 50-52 minutes bake time. Hope it helps!
