Chicken Gyros

I can’t even tell you the amount of times I’ve made this meal and have been unable to share with you all-the pictures weren’t quite right.  I’m very particular that way, but I'm sure most of you know that by now:).  I guess it was the same with the chicken taquitos!  I can never give it proper justice.  But since I am semi satisfied with the photos, I suppose I can share with you allJ  
This meal is definitely one of my favorites to make.  It’s easy & healthy, with plenty of leftovers for this house of two.  I love that the tzatziki sauce is so cool & creamy to top the gyros-it definitely compliments it well.  And the chicken is super moist with an added Greek flair-hard to resist having just one!  I served mine by itself, I didn't think it needed any accompaniments. It was so tasty!

Chicken Gyros
Makes about 4-6 servings

INGREDIENTS
For the chicken:
4 cloves garlic, smashed
Juice of 1 lemon
2 teaspoons red wine vinegar
2 tablespoons extra virgin olive oil
2 heaping tbsp. plain yogurt
1 tablespoon dried oregano
Salt and pepper
1 1/2 pound boneless, skinless, chicken breasts

To assemble:
Pita bread (I use whole wheat)
Fresh tomatoes, seeded and diced
Red onion, sliced thin
Tzatziki sauce

DIRECTIONS
In a medium sized bowl, combine the garlic, lemon juice, red wine vinegar, olive oil, yogurt, oregano, salt & pepper to taste. Whisk together until well combined. .Add in the chicken pieces and mix well to coat. Cover, refrigerate for 1 hour.

Cook the chicken in a skillet or a broiler. Once the chicken is cooked through, transfer to a plate & allow to rest for 5 minutes. Cut into strips and set aside.

Heat the pitas slightly & top with chicken, tzatziki sauce, tomatoes, onions & serve.
