Caramel Apple Cheesecake Pie 

 

I have a lot of favorite food & desserts on this blog, but I haven’t talked or posted much about pie.  This year I’m planning on trying to remedy this-just you wait!  I can’t :D.

This pie is in my top 3-Yes, it has a lengthy title, but you needed to hear how awesome it is!  I drool just thinking about it.  It’s seriously one of the best pies I’ve ever made and I’m always delighted to serve it.  I usually make it for Thanksgiving & Christmas, but everyone was too full after a Turkey dinner! My friend had brought me a huge bag of apples-so I knew I had to make it!J

Cherry Slab Pie

It’s a rare and unexpected occurrence when my dad asks me to make something for him.  It’s even more so when he says “Put that on your organization {he meant the blog, I hope!}”  He tries to refrain from the sweets for the most part so it’s a little serious when he asks.  Of course I can’t say no, but I always get nervous because I want him to love it!

Lemon Meringue Pie

It amazes me how quickly time flies by.  I can’t believe my dad is already turning 70 today!  It’s a little bit of a shocker; I think I’m still in disbelief.  I think we need to slow time down.  It seems like it was only few years ago that he showed us how to fish (and spent the majority of time untangling one of our lines), numerous camping trips, arguing about ridiculous curfews, teaching 3 daughters how to drive (I couldn’t imagine anything being more stressful than that!), going to our graduations, and, most recently, attending my sister’s wedding.  We have teased him about his old-age endless times and how my Uncle Bob coined the phrase “Elder-siting” just for him.  But, no matter how old one is, it all comes down to how you act & feel.  And I think my dad’s doing pretty good for his age-he’s constantly learning and pushing himself to do everything he wants to do.  He’s even got himself connected with Facebook and Skype! Scary-I know!

I have a love/hate relationship with nightshifts.  It’s mainly a hate relationship, but that’s okay.  I hate having to drink excessive amounts of coffee to counteract my zombie-like existence for days on afterwards.  I miss holidays, like Pi day, or end up scrambling to find something to make/celebrate it.  Fortunately, I woke up early enough to make a pie to share with you!
