Lemon Meringue Pie

It amazes me how quickly time flies by.  I can’t believe my dad is already turning 70 today!  It’s a little bit of a shocker; I think I’m still in disbelief.  I think we need to slow time down.  It seems like it was only few years ago that he showed us how to fish (and spent the majority of time untangling one of our lines), numerous camping trips, arguing about ridiculous curfews, teaching 3 daughters how to drive (I couldn’t imagine anything being more stressful than that!), going to our graduations, and, most recently, attending my sister’s wedding.  We have teased him about his old-age endless times and how my Uncle Bob coined the phrase “Elder-siting” just for him.  But, no matter how old one is, it all comes down to how you act & feel.  And I think my dad’s doing pretty good for his age-he’s constantly learning and pushing himself to do everything he wants to do.  He’s even got himself connected with Facebook and Skype! Scary-I know!

My Sisters Wedding: part two

(the wedding and after party)

And here comes the part most of you have been waiting for: the wedding.  The ceremony was small and simple, yet beautiful - Charlee and Eugene said their vows in the crisp, morning air while overlooking the tranquil ocean.  I could not imagine a more picturesque, suitable location for these two lovebirds – it truly was a reflection of their love.  After the ceremony, we had brunch at the Black Rock Oceanfront Resort, and mingled with the other guests – it was so much fun!  We were able to visit with family, meet Eugene’s family, and greet Charlee and Eugene’s mutual friends.

My Sisters Wedding: part one
(the island)

Earlier this month we traveled to Vancouver Island for my sister Charlee’s wedding.  The drive took approximately 17 hours to complete so we split it up over the course of 2 days.  My week off wasn’t exactly as relaxing as we had originally thought, but we had a blast nonetheless.  We spent our first night in PG with Marlina.  We pigged out on birthday cake and stayed up late watching TV and catching up.  So much fun!  After dozing off and waking up at 5 am, we drove and took the ferry to Nanaimo and spent the night at Charlee’s house and met her fiancĂ©’s family.  I am happy to say they are a fantastic bunch of people and very welcoming to others-I felt at ease with themJ.

Earth Day + Oven Roasted Smoky Potatoes

Charlee (my older sister) and I at my dad's booth at our local farmers market.
Happy Earth Day!  It’s that time of year (although we should be doing it everyday!) to set goals in which we should evaluate ways to conserve the environment and save our beautiful planet.  There is always ways in which we could improve our methods to reduce consumption and waste, such as the use of reusable bags, composting, buying local/having your own garden, using less electricity, carpooling/walking, ect.  These are just a few ideas but the options are endless.
